1 1/4 lb. lean ground turkey
1 large onion, chopped
1 (1.25-oz) envelope chili seasoning mix
1 (12-oz) can beer (we used blue moon)
2 cups frozen corn kernels
1 red bell pepper, chopped
1 orange bell pepper, chopped
1 green bell pepper, chopped
1 (28-oz) can crushed tomatoes
2 (15-oz) cans black beans, drained and rinsed
1 (8-oz) can tomato sauce
3/4 tsp. salt
1 Tbs. cayenne pepper
1 tsp. cumin
1. Cook first 4 ingredients in a large skillet over medium-high heat, stirring often, 8 minutes or until turkey crumbles and is no longer pink. Stir in beer and cook for 2 minutes. Put mixture into slow cooker.
2. Stir in remaining ingredients.
3. Cover and cook on LOW for 6 hours.
4. Top with cheese and onions.
5. Enjoy!
