Blueberry Waffles



Here is a recipe for classic blueberry waffles. I have never been great at making waffles. Inevitably, the waffles stick to the waffle maker and everything ends up making a mess. This recipe was FANTASTIC! They cooked perfectly using my waffle maker. I used the highest setting to get them as dark as possible, this prevented them from getting soggy.

Blueberry Waffles
Recipezaar

1 Cup blueberries
3 tsp baking powder
2 eggs, seperated
1 tbsp sugar
2 cups sifted flour
1 cup milk
1/2 cup soy milk (recipe calls for 1 1/2 cups milk, but we ran out!)
1/2 tsp salt
1/4 cup melted butter

1. Preheat the waffle iron.
2. Beat egg whites until stiff and set aside.
3. Sift together dry ingredients.
4. Slowly stir in milk, beaten egg yolks, and melted butter.
5. Fold in blueberries
6. Fold in egg whites which were stiffly beaten.
7. Bake in hot waffle iron.
